Paprika Almonds

Ingredients
  • 1 egg white
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp sweet paprika or smoked paprika
  • 400g whole blanched or natural almonds
Preparation
  1. Preheat oven to 180_C/Gas Mark 4/350çF
  2. Line a baking sheet with parchment paper or well-oiled foil
  3. Whisk together egg white, salt, cumin and paprika in a medium bowl, and add almonds and toss to coat
  4. Spread almonds on prepared baking sheet and roast for 10 minutes
  5. Stir and continue roasting 15 to 20 minutes, or until golden and fragrant.
  6. Transfer almonds on parchment or foil to a rack and cool completely.
  7. Loosen with a spatula and serve, or store airtight for up to 1 day.
