Honey Crystal Almonds

Ingredients
  • 400g whole natural almonds
  • 100g honey
  • 25g butter
  • 210g demerara sugar
Preparation
  1. Spread almonds in a shallow pan.
  2. Place in cold oven; turn oven to 180_C/Gas Mark 4/350çF and roast 12 to 20 minutes, stirring occasionally, until well roasted.
  3. Over medium heat in medium saucepan, heat honey and butter to boiling.
  4. Reduce heat to medium low, simmer 2 minutes, stirring occasionally.
  5. Add almonds; simmer and stir 2 minutes.
  6. Using slotted spoon, transfer almonds to baking sheet lined with parchment paper or sprayed with non-stick cooking spray; spread in single layer and cool slightly.
  7. Toss almonds with sugar to coat using a medium plastic food storage bag.
