Almond Pesto

Serves: 10
  • 125g almonds
  • 60g fresh basil, including stalks
  • 1 garlic clove, peeled
  • Juice of ½ lemon
  • 125ml olive oil
  • Pinch of sea salt
Preparation
  1. Preheat oven to 180°C / Gas Mark 4.
  2. Spread out the almonds and garlic evenly onto a baking tray and roast for 10 minutes. They should look golden brown. Remove from oven and allow to cool.
  3. Once cool, place the almonds and garlic in a food processor and add the basil, lemon juice, oil and salt. Pulse until smooth or it has reached your desired texture.
  4. The pesto will keep for a week in an airtight container in the fridge.
