Almonds mixed with spicy plums



120g whole natural almonds

Fine shreds of lemon zest

1 tsp vanilla extract

2 tsp caster sugar

3 plums, pitted and sliced

½ tsp ground mixed spice



Put the almonds into a dry frying pan and heat for about 1 minute to toast them, shaking the pan occasionally. Tip them from the pan and set aside. Put the lemon zest, vanilla extract, sugar, sliced plums and mixed spice into the pan with a splash (about 2 tbsp) of boiling water. Heat for 1-2 minutes, just to cook the plums slightly, and to evaporate the water. Cool, mix with the almonds, then serve. TIP: Use apricots or nectarines instead of plums.
